Strawberry Charlotte

A great classic among desserts, this Strawberry Charlotte recipe is a delight.

Ingredients for 4 persons :

  • 25 soft spoon cookies
  • 3 tbsp. icing sugar
  • 150 g strawberries

For the strawberry syrup:

  • 10 cl of water
  • 100 g sugar
  • 80 g strawberries

For the strawberry mousse:

  • 30 cl of whole liquid cream
  • 5 gelatin sheets (2 g each)
  • 500 g of strawberry coulis
  • 100 g sugar

Strawberry Charlotte

For the strawberry syrup:

- In a saucepan, combine the water and sugar, bring to the boil. Let cool.

- Wash and hull strawberries. Mix them and pass them through a sieve to remove the seeds.

Combine syrup and strawberries. Reserve.

For the strawberry mousse:

- Beat the very cold cream vigorously until it sticks to the branches of the whisk. Place in the fridge.

- Soften the gelatin in a bowl of cold water.

- Heat 100 g of strawberry coulis with the sugar. Stir in the drained gelatin well. Add this mixture to the remaining 400 g of coulis. Incorporate 1/3 whipped cream, mix to obtain a homogeneous mixture.

Incorporate the rest of the cream all at once, mix gently.

- Soak the cookies with strawberry syrup, place them at the bottom of the charlotte mold and on the edges (cut the protruding cookies and set aside).

Pour in half of the mousse. Distribute the reserved cookie pieces and finish filling the mold with the other half of the mousse. Place in the fridge for 4 hours.

- Unmold, sprinkle with icing sugar and decorate with strawberries.
