Leek and ham pie

A staple of pies, leek and ham pie is easy, smooth and delicious at the same time.

Ingredients for 4 persons :

  • 1 onion
  • 20 g semi-salted butter
  • 100 g of ham (or ham)
  • 2 leeks
  • 2 eggs
  • 20 cl of liquid cream
  • 10 cl of milk
  • 1 pinch of Espelette pepper
  • 1 puff pastry
  • Salt, freshly ground pepper

Leek and ham pie recipe

Preheat the oven to 180 ° C (th. 6).

  • Peel and mince the onion.
  • In a skillet, melt the butter and sweat the chopped onion without coloring.
  • Slice the ham.
  • Remove the first leaves from the leeks. Cut them into 10 cm sections, wash them. Steam them or cook them in the English style.
  • In a salad bowl, break the eggs, beat them into an omelet then pour in the cream and milk. Season with salt, chilli and pepper.
  • Prick the pie shell, distribute the leeks, onions and sliced ​​ham. Pour in the contents of the salad bowl.

Bake for about 40 minutes.
